Growing up, she had always discussed the idea, but never pursued it because “my mom and dad came from the era where the woman stayed at home … and the man worked,” he said. Trejo’s Tacos aren’t your typical tacos either, his taqueria features a selection of vegan and vegetarian-friendly options, as well as gluten-free dishes.
